Goat is delicious. Especially in a goat curry as it is cooked for so long it shreds away from the bone. Also I got some bone in it so had some of the marrow. Was rather tasty.

Baguette pan is here.... going to give it a whirl but I have no ideas as to the quantities. :lol: Going to try 500G of flour to 330ML water. See if that makes two 43CM ones. It can make 2 small loaves or one huge one.

Once shaped I leave them on there for the second (or third) rise and I 'should' be left with some nice straight and round baguettes. It's easier than buying a couche :shifty:

Higher hydration normally, and you brush it down with water before baking rather than flouring it.

Not made bread in a long time. Last time I did was in a bread maker and it was a disaster because the mill got stuch in it. So my lovely smelling "loaf" was two ripped up parts and some crumbs.

I make flat breads/pittas/naans but never a sandwich loaf. Might have to give it a go. Speaking of bread, in Waitrose they sell a super nice bread with figs and walnuts in it. It's like £4 though so I rarely buy it.

I'd say go for it. If you're feeling lazy 'no kneed' bread is pretty easy and requires little effort. Although I wouldn't make a loaf (in a tin) with it.

I'm alright with the kneading usually. Yeah might give it a go some time. I still want to make the sour dough but it's 2 days worth of faffing about. So I'm not sure it's worth it doing it in a standard oven. If I had a stone/wood oven in my garden then I would. My grandad in Italy used to make it in one of those and it was glorious :wub:

The problem I have with home made bread is that you just have to tear into it the minute its cool enough to eat. And I've never nailed a great white bread recipe for my bread maker either. The wholemeal one though is superb.

Anyone know any good books for simple healthy recipes?

Looking to eat a little better, most of the stuff I usually cook calls for butter and/or cream but the idea of grilled chicken and plain veg every night is depressing me. A bit of inspiration should help me along.

Get some sauces to marinade your chicken in, hot sauces go very well with grilled chicken. Had some with a jalapeño sauce the other night, was delicious.

Aye, as bland as chicken is, when put with a good marinade it makes an excellent meal. Today I made myself some Chicken Tikka pitta breads. Nice and healthy and delicious.

150g/5oz dried yellow shi wheat flour noodles or medium egg noodles
toasted sesame oil
300g/11oz skinless chicken breast fillets, sliced into strips
a dash of dark soy sauce
1 teaspoon five-spice powder
1 teaspoon chilli sauce (optional)
1 tablespoon cornflour
2 tablespoons groundnut oil
1 red pepper, deseeded and finely sliced
150g/5oz bean sprouts
1 large spring onion, sliced lengthways
2 tablespoons light soy sauce
finely ground black pepper

1 Cook the noodles for 3 minutes in a pan of boiling water until al dente or as per the packet instructions. Drain, then run them under cold running water and drain again. Drizzle with a few splashes of sesame oil and toss through to prevent them from sticking.
2 Season the chicken with a splash of dark soy sauce, the five-spice powder and chilli sauce, if using, mix well. Coat lightly with the cornflour.
3 Heat a wok over a high heat, add the groundnut oil and heat until smoking, then add the chicken and stir-fry for 2–3 minutes until cooked.
4 Add the red pepper and stir-fry for 1 minute, then add the bean sprouts and spring onion and stir-fry for less than 1 minute. Add the cooked noodles and season with the light soy sauce, 1 teaspoon sesame oil and ground black pepper. Stir well and serve immediately.

Just had a bowl of Spanish chicken. For anyone who hasn't tried this, it's a must. Super quick and so so incredibly tasty. Healthy too.
