i keep mine for all my consoles. partly if i need to return it, but mostly for nostalgia sake. 10 years down the line when im rummaging through the attic and find a console that got me through some tough times, nicely packed in its box. Of course the living room then gets messed up with wires and crap all over the place for a couple hours until i realise why i put it in the loft in the first place.
i used to build castles out of them when i was a kid - wish i could still do that without being crazy.

I sometimes recycle the play.com jiffy bags and use them to send off ebay/amazon marketplace orders!
I have stacks of boxes in pristine condition in my loft. Most of them are PC game boxes but there are a huge number of GBA, Gameboy and Game Gear boxes housed in shoe boxes as well. I think I kept them because there was an intention to sell them on at some point but it never happened and they have now moved house with me more than once.
It has to be said that I miss those big PC boxes a lot. Thick, high quality manuals, a seperate jewel case for the CD and sometimes some nice art bonuses etc. There are far more competing formats now though so it's understandable that retailers don't have the shelf space for them.
Well my decision was to keep the 360, PS3 and Wii boxes (still not sure why I can't part with them!) in the attic, and get rid of everything else. I can't believed some of you kept the Rock Band instruments box! I got rid of that right away - it could fill a cupboard on it's own. Don't even think it would have fitted through the hatch to my attic.
